  • 1 packet taco seasoning
  • 1 bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1/4 cup salsa

  • 1/2 cup sliced black olives

  • 1/2 cup sour cream
  • 1/4 cup salsa

Instructions

  • Preheat the oven to 350 degrees F.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion, bell pepper, and jalapeno, and cook until softened, about 5 minutes.
  • Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  • Stir in the taco seasoning and cook for an additional 2-3 minutes. Remove from heat.
  • On a large baking sheet, spread out the tortilla chips in an even layer.
  • Sprinkle the cooked beef mixture over the chips, then top with the shredded cheddar cheese, black beans, and corn kernels.
  • Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
