Ingredients
- 1.5 lbs beef brisket
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup beef broth
- 1 bag of tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup black beans
- 1 cup diced tomatoes
- 1/2 cup sliced jalapenos
- 1/4 cup chopped cilantro
- 1/2 cup sour cream
- 1/4 cup sliced green onions
Instructions
- Preheat the oven to 325°F.
- In a small bowl, mix together 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper to create a spice rub.
- Rub the spice mixture all over the beef brisket.
- Place the seasoned brisket in a roasting pan and pour 1/2 cup of beef broth into the pan.
- Cover the pan with foil and roast in the preheated oven for 3.5 to 4 hours, or until the brisket is tender and easily shreds with a fork.
- Remove the brisket from the oven and let it rest for 10 minutes before shredding it with two forks.
- While the brisket is resting, spread the tortilla chips in a single layer on a large baking sheet.
- Sprinkle 2 cups of shredded cheddar cheese over the chips, then evenly distribute 1 cup of black beans and 1 cup of diced tomatoes on top.
- Place the shredded beef brisket on top of the nachos, then add 1/2 cup of sliced jalapenos.
- Bake the nachos in the oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove the nachos from the oven and sprinkle 1/4 cup of chopped cilantro and 1/4 cup of sliced green onions over the top.
