  • 2 cups shredded cheddar cheese
  • 1 cup black beans
  • 1 cup diced tomatoes
  • 1/2 cup sliced jalapenos
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream
  • 1/4 cup sliced green onions

Instructions

  • Preheat the oven to 325°F.
  • In a small bowl, mix together 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper to create a spice rub.
  • Rub the spice mixture all over the beef brisket.
  • Place the seasoned brisket in a roasting pan and pour 1/2 cup of beef broth into the pan.
  • Cover the pan with foil and roast in the preheated oven for 3.5 to 4 hours, or until the brisket is tender and easily shreds with a fork.
  • Remove the brisket from the oven and let it rest for 10 minutes before shredding it with two forks.
  • While the brisket is resting, spread the tortilla chips in a single layer on a large baking sheet.
  • Sprinkle 2 cups of shredded cheddar cheese over the chips, then evenly distribute 1 cup of black beans and 1 cup of diced tomatoes on top.
  • Place the shredded beef brisket on top of the nachos, then add 1/2 cup of sliced jalapenos.
  • Bake the nachos in the oven for 10-15 minutes, or until the cheese is melted and bubbly.
