Ingredients
- 1 beef tongue (about 3 lbs)
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon salt
- 1 teaspoon black pepper
- 12 tostada shells
- 1 cup refried beans
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup chopped cilantro
- 1/2 cup crumbled queso fresco
- 1/2 cup sour cream
- 1 lime, cut into wedges
Instructions
- Place the beef tongue in a large pot and cover with water. Add the chopped onion, minced garlic, bay leaves, salt, and black pepper.
- Bring the water to a boil, then reduce the heat to low and simmer for 2.5 to 3 hours, or until the tongue is tender.
- Remove the tongue from the pot and allow it to cool. Once cooled, peel off the tough outer skin and slice the tongue thinly.
- Spread a layer of refried beans on each tostada shell.
- Top the beans with slices of beef tongue.
- Add shredded lettuce, diced tomatoes, chopped cilantro, and crumbled queso fresco on top of the beef tongue.
- Drizzle with sour cream and serve with lime wedges on the side.
