Instructions

  • Place the beef tongue in a large pot and cover with water. Add the chopped onion, minced garlic, bay leaves, salt, and black pepper.
  • Bring the water to a boil, then reduce the heat to low and simmer for 2.5 to 3 hours, or until the tongue is tender.
  • Remove the tongue from the pot and allow it to cool. Once cooled, peel off the tough outer skin and slice the tongue thinly.
  • Spread a layer of refried beans on each tostada shell.
  • Top the beans with slices of beef tongue.
