- 2 ripe mangoes, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 tablespoon honey

Instructions
- In a large bowl, combine 1 cup of flaked salted codfish, 1 cup of all-purpose flour, 1/2 cup of water, 1/2 small finely chopped onion, 1/2 finely chopped red bell pepper, 2 minced cloves of garlic, 1 finely chopped scotch bonnet pepper, 1/4 cup of chopped scallions, 1 teaspoon of baking powder, 1 teaspoon of thyme, 1 teaspoon of black pepper, 1/2 teaspoon of paprika, and 1/2 teaspoon of salt. Mix well to form a thick batter.
- In a separate bowl, prepare the mango salsa by combining 2 diced ripe mangoes, 1/4 cup of finely chopped red onion, 1/4 cup of chopped fresh cilantro, the juice of 1 lime, and 1 tablespoon of honey. Season with salt to taste and mix well. Refrigerate until ready to serve.
- In a large skillet, heat vegetable oil over medium-high heat. Drop spoonfuls of the saltfish batter into the hot oil and fry until golden brown, about 2-3 minutes per side. Drain on paper towels to remove excess oil.
- Serve the Jamaican saltfish fritters hot with the refreshing mango salsa on the side. Enjoy!
Jamaican Saltfish Fritters, also known as "stamp and go," are a beloved dish with a rich history. This traditional Jamaican snack is made with salted cod, flour, and a blend of herbs and spices. The fritters are fried to golden perfection, resulting in a crispy exterior and a tender, flavorful interior. The addition of mango salsa adds a refreshing and tangy twist to the dish, complementing the savory flavors of the fritters. In Jamaica, renowned chefs and home cooks alike take pride in perfecting their saltfish fritters, each adding their own unique touch to the recipe. The dish is a staple at local eateries and street food stalls across the island, where it's often served with a side of zesty mango salsa. The best version of this dish can be found in authentic Jamaican restaurants, where the fritters are expertly seasoned and fried to perfection. The key to making exceptional saltfish fritters lies in the quality of the salted cod and the balance of spices. The fish should be soaked to remove excess salt and then flaked to the perfect consistency. The addition of scotch bonnet peppers, thyme, and green onions infuses the fritters with a burst of Caribbean flavors. As for the mango salsa, ripe mangoes, red onions, cilantro, and a hint of lime juice come together to create a vibrant and delicious accompaniment. For those looking to explore alternative methods, some chefs opt for incorporating additional ingredients such as bell peppers, garlic, and even a hint of curry powder to elevate the flavor profile of the fritters. Whether enjoyed as a snack or a light meal, Jamaican Saltfish Fritters with mango salsa offer a delightful fusion of textures and flavors that capture the essence of Caribbean cuisine.
