Beef and Guinness Pie

Ingredients
- 2 lbs stewing beef, diced
- 2 tbsp all-purpose flour
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 2 onions, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 can (14.9 oz) Guinness beer
- 1 cup beef broth
- 2 tbsp tomato paste
- 2 sprigs of thyme
- 2 bay leaves
- 1 sheet of puff pastry
- 1 egg, beaten
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, toss the diced beef with 2 tablespoons of flour, salt, and pepper until the beef is coated.
- In a large oven-safe pot, heat 2 tablespoons of vegetable oil over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onions, carrots, celery, and minced garlic. Cook for 5 minutes until the vegetables are softened.
- Pour in the Guinness beer and beef broth, then stir in the tomato paste. Add the thyme and bay leaves. Bring the mixture to a simmer.
- Return the browned beef to the pot. Cover and transfer to the preheated oven. Cook for 1.5 hours, or until the beef is tender.
- Remove the pot from the oven and discard the thyme sprigs and bay leaves. Allow the filling to cool slightly.
- Increase the oven temperature to 400°F (200°C).
- Roll out the puff pastry on a floured surface to fit the top of the pot. Place the pastry over the filling and brush with beaten egg.
- Make a few slits in the pastry to allow steam to escape. Place the pot back in the oven and bake for 20-25 minutes, or until the pastry is golden brown and puffed.
- Allow the pie to cool for a few minutes before serving. Enjoy!
