- 1 cup of saltfish, boiled and flaked

- 1 teaspoon of baking powder
- 1 teaspoon of thyme
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of hot pepper sauce
- 2 cups of vegetable oil for frying
Instructions
- In a large bowl, combine 1 cup of flaked saltfish, 1 cup of all-purpose flour, 1/2 cup of water, 1/2 cup of chopped onion, 1/4 cup of chopped scallions, 1/4 cup of chopped bell pepper, 1 teaspoon of baking powder, 1 teaspoon of thyme, 1/2 teaspoon of black pepper, and 1/2 teaspoon of hot pepper sauce.
- Mix the ingredients until well combined to form a thick batter.
- In a large skillet, heat 2 cups of vegetable oil over medium-high heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
