Instructions

  • In a medium saucepan, melt 1 tablespoon of butter over medium heat.
  • Add 1/4 cup of finely chopped onion and 2 jalapeno peppers, and cook until softened, about 3-4 minutes.
  • Stir in 2 cloves of minced garlic and cook for an additional 1 minute.
  • Sprinkle 2 tablespoons of all-purpose flour over the onion and jalapeno mixture, and cook for 1-2 minutes, stirring constantly.
  • Gradually whisk in 1 cup of whole milk, and cook until the mixture thickens, about 2-3 minutes.
  • Reduce the heat to low, and stir in 8 ounces of shredded white American cheese and 4 ounces of shredded Monterey Jack cheese until melted and smooth.
  • Season the queso blanco with 1/4 teaspoon of cumin, and salt and pepper to taste.
  • Transfer the queso blanco to a serving bowl, and garnish with chopped fresh cilantro if desired.
  • Serve the jalapeno queso blanco warm with tortilla chips or sliced vegetables for dipping.
