Ingredients
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 2 jalapeno peppers, thinly sliced
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 tablespoon olive oil
Instructions
- In a large skillet, heat 1/2 tablespoon of olive oil over medium heat.
- Place one flour tortilla in the skillet and sprinkle 1/2 cup of shredded cheddar cheese evenly over the tortilla.
- Layer with jalapeno slices, red onion, and cilantro.
- Top with another 1/2 cup of shredded cheddar cheese and place another flour tortilla on top.
- Cook for 2-3 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
- Carefully flip the quesadilla and cook for an additional 2-3 minutes until the other side is golden brown and the cheese is fully melted.
- Remove from the skillet and repeat with the remaining tortillas and ingredients.
- Cut each quesadilla into wedges and serve hot with your favorite salsa or sour cream.
