Instructions

  • In a large skillet, heat 1/2 tablespoon of olive oil over medium heat.
  • Place one flour tortilla in the skillet and sprinkle 1/2 cup of shredded cheddar cheese evenly over the tortilla.
  • Layer with jalapeno slices, red onion, and cilantro.
  • Top with another 1/2 cup of shredded cheddar cheese and place another flour tortilla on top.
  • Cook for 2-3 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
  • Carefully flip the quesadilla and cook for an additional 2-3 minutes until the other side is golden brown and the cheese is fully melted.
  • Remove from the skillet and repeat with the remaining tortillas and ingredients.
  • Cut each quesadilla into wedges and serve hot with your favorite salsa or sour cream.
