Ingredients
- 1/2 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 egg

- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups chicken broth

- 4 cups fresh spinach, chopped
- Salt and pepper to taste

Instructions
- In a large bowl, combine 1/2 pound ground beef, 1/2 cup bread crumbs, 1/4 cup grated Parmesan cheese, 1 egg, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Mix well and form into small meatballs.
