  • 1 bag of corn tortillas
  • 2 tablespoons of olive oil

Instructions

  • In a medium bowl, combine 3 diced ripe mangoes, 1/2 finely chopped red onion, 1 minced jalapeno pepper, 1/4 cup chopped fresh cilantro, and the juice of 2 limes. Mix well and add salt to taste. Refrigerate for at least 30 minutes to allow the flavors to meld.
  • Preheat the oven to 350 degrees F. Brush both sides of the corn tortillas with 2 tablespoons of olive oil. Cut the tortillas into triangles and place them on a baking sheet in a single layer.
  • Bake the tortilla triangles for 10-12 minutes, or until they are golden and crispy. Remove from the oven and let them cool.
  • Serve the homemade chips with the mango salsa and enjoy!
