Created by: Howcan Team

Ingredients

  • 4 large russet potatoes, peeled
  • 1 small onion
  • 2 eggs
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 2 tablespoons chopped chives

Instructions

  • Grate the potatoes and onion using a box grater or food processor. Place the grated mixture in a clean kitchen towel and squeeze out as much liquid as possible.
  • In a large bowl, combine the grated potatoes and onion with 2 eggs, 3 tablespoons of flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix well to combine.
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Scoop up 1/4 cup of the potato mixture and carefully place it in the hot oil, flattening it with a spatula to form a pancake. Repeat with the remaining potato mixture, cooking in batches if necessary.
  • Fry the latkes for 3-4 minutes on each side, or until they are golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.
  • Sprinkle the hot latkes with chopped chives before serving.
  • Serve the chive Hanukkah latkes with applesauce and sour cream on the side. Enjoy!

Hanukkah Latkes, also known as potato pancakes, have a rich history dating back to the Jewish holiday of Hanukkah. Traditionally, these crispy delights are made with grated potatoes, onions, eggs, and a sprinkle of chives for added flavor. The dish is fried to golden perfection, symbolizing the miracle of the oil that burned for eight days in the ancient Holy Temple. In modern times, renowned chefs like Yotam Ottolenghi have put their own spin on the classic recipe, incorporating unique ingredients and techniques. While the best version of this dish can be found in Jewish delis and restaurants, home cooks can also create mouthwatering latkes by mastering the art of achieving the perfect crispy texture and balancing the flavors of the ingredients. Whether enjoyed with applesauce or sour cream, Hanukkah Latkes with a sprinkle of chives are a beloved holiday treat that brings joy to tables around the world.
