Chive Hanukkah Latkes

Ingredients
- 4 large russet potatoes, peeled
- 1 small onion
- 2 eggs
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup vegetable oil
- 2 tablespoons chopped chives
Instructions
- Grate the potatoes and onion using a box grater or food processor. Place the grated mixture in a clean kitchen towel and squeeze out as much liquid as possible.
- In a large bowl, combine the grated potatoes and onion with 2 eggs, 3 tablespoons of flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix well to combine.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Scoop up 1/4 cup of the potato mixture and carefully place it in the hot oil, flattening it with a spatula to form a pancake. Repeat with the remaining potato mixture, cooking in batches if necessary.
- Fry the latkes for 3-4 minutes on each side, or until they are golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.
- Sprinkle the hot latkes with chopped chives before serving.
- Serve the chive Hanukkah latkes with applesauce and sour cream on the side. Enjoy!
