Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/2 cup cold water
- 1 cup cooked ham, diced
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 cup mayonnaise
- 2 tablespoons hot sauce
- 1 tablespoon lime juice
- 1/2 teaspoon cumin
- 1/4 teaspoon chili powder
- Salt to taste
Instructions
- In a large bowl, combine 2 cups of flour and 1/2 teaspoon of salt. Cut in the cold butter pieces using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Gradually add the cold water, mixing until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a separate bowl, mix together the diced ham, shredded mozzarella cheese, chopped green onions, chopped cilantro, black pepper, paprika, cayenne pepper, garlic powder, and onion powder.
- On a floured surface, roll out the chilled dough to 1/8 inch thickness. Using a round cutter or a small plate, cut out circles of dough.
- Place a spoonful of the ham and cheese filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape, then crimp the edges with a fork to seal.
- Transfer the empanadas to the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
- While the empanadas are baking, prepare the spicy dipping sauce by combining mayonnaise, hot sauce, lime juice, cumin, chili powder, and salt in a small bowl. Mix well and adjust seasoning to taste.
