Ingredients
- 4 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- 4 slices of ham
- 1/2 cup shredded cheddar cheese
- 2 large flour tortillas
- 1/2 cup salsa
Instructions
- In a bowl, whisk together 4 large eggs, 1/4 cup of milk, and salt and pepper to taste.
- Heat a non-stick skillet over medium heat and pour in the egg mixture. Cook, stirring occasionally, until the eggs are scrambled and set. Remove from heat.
- Lay out 2 large flour tortillas and divide the scrambled eggs evenly between them, spreading the eggs in the center of each tortilla.
- Place 2 slices of ham on top of the eggs on each tortilla, and sprinkle 1/4 cup of shredded cheddar cheese over the ham on each tortilla.
- Fold the sides of the tortillas over the filling, then roll them up tightly to form a wrap.
- In the same skillet used for the eggs, heat the wraps over medium heat for 1-2 minutes on each side, or until the tortillas are lightly browned and the cheese is melted.
- Cut the wraps in half and serve with 1/2 cup of salsa on the side.
