Instructions

  • Preheat a grill or grill pan to medium-high heat.
  • Brush the cut side of the peaches with 1 tablespoon of olive oil and season with salt and pepper.
  • Place the peaches on the grill, cut side down, and cook for 3-4 minutes until grill marks appear. Flip and grill for an additional 2-3 minutes. Remove from the grill and set aside.
  • In a large bowl, toss the arugula with the remaining 1 tablespoon of olive oil and season with salt and pepper.
  • Divide the arugula among 4 plates. Top each plate with 2 grilled peach halves and a portion of burrata cheese.
  • Drizzle the balsamic glaze over the salads and sprinkle with chopped basil.
  • Serve immediately and enjoy!
