Ingredients
- 4 ripe peaches, halved and pitted
- 2 tablespoons olive oil
- 8 ounces burrata cheese
- 4 cups arugula
- 1/4 cup balsamic glaze
- Salt and pepper to taste
- 2 tablespoons chopped fresh basil
Instructions
- Preheat a grill or grill pan to medium-high heat.
- Brush the cut side of the peaches with 1 tablespoon of olive oil and season with salt and pepper.
- Place the peaches on the grill, cut side down, and cook for 3-4 minutes until grill marks appear. Flip and grill for an additional 2-3 minutes. Remove from the grill and set aside.
- In a large bowl, toss the arugula with the remaining 1 tablespoon of olive oil and season with salt and pepper.
- Divide the arugula among 4 plates. Top each plate with 2 grilled peach halves and a portion of burrata cheese.
- Drizzle the balsamic glaze over the salads and sprinkle with chopped basil.
- Serve immediately and enjoy!
