Instructions

  • Preheat grill to medium-high heat.
  • In a small bowl, whisk together 1/4 cup olive oil, minced garlic, lemon zest, lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  • Brush the lemon garlic mixture over the salmon fillets, coating them evenly. Let them marinate for 10 minutes.
  • While the salmon is marinating, rinse the quinoa under cold water. In a medium saucepan, bring 4 cups of water or chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and stir in chopped parsley.
  • Place the marinated salmon fillets on the preheated grill and cook for 4-5 minutes per side, or until the salmon is cooked through and has grill marks.
