Instructions

  • In a large bowl, mix 2 cups of cooked and shredded chicken breast, 1 cup of shredded cheddar cheese, 1/2 cup of diced tomatoes, 1/4 cup of diced red onion, and 1/4 cup of chopped fresh cilantro. Season with 1 teaspoon of ground cumin, 1 teaspoon of chili powder, and salt and pepper to taste.
  • Place a large skillet over medium heat and add 1/2 tablespoon of olive oil. Place a flour tortilla in the skillet and spread 1/4 of the chicken mixture over half of the tortilla. Fold the other half of the tortilla over the filling and press down gently with a spatula.
  • Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and chicken mixture, adding more olive oil to the skillet as needed.
  • Remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges. Serve with your favorite toppings such as sour cream, guacamole, or salsa.
