Ingredients
- 2 boneless, skinless chicken breasts
- 1 head of romaine lettuce, chopped
- 1 cup of croutons
- 1/2 cup of grated parmesan cheese
- 1/2 cup of Caesar dressing
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Brush the chicken breasts with 1 tablespoon of olive oil and season with salt and pepper.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let it rest for 5 minutes.
- While the chicken is resting, in a large bowl, toss the chopped romaine lettuce with 1/2 cup of Caesar dressing and 1/4 cup of grated parmesan cheese.
- Divide the dressed romaine lettuce onto 4 plates and sprinkle each with 1/4 cup of croutons.
- Slice the grilled chicken and place on top of the salads.
- Sprinkle each salad with the remaining 1/4 cup of grated parmesan cheese.
- Serve immediately and enjoy!
