Instructions

  • Preheat the grill to medium-high heat.
  • Brush the chicken breasts with 1 tablespoon of olive oil and season with salt and pepper.
  • Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let it rest for 5 minutes.
  • While the chicken is resting, in a large bowl, toss the chopped romaine lettuce with 1/2 cup of Caesar dressing and 1/4 cup of grated parmesan cheese.
  • Divide the dressed romaine lettuce onto 4 plates and sprinkle each with 1/4 cup of croutons.
  • Slice the grilled chicken and place on top of the salads.
  • Sprinkle each salad with the remaining 1/4 cup of grated parmesan cheese.
  • Serve immediately and enjoy!
