Ingredients
- 8 oz of pasta
- 2 tbsp olive oil
- 4 cloves of garlic, minced
- 8 oz of chorizo, sliced
- 1/2 cup of chicken broth
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat 2 tbsp of olive oil over medium heat.
- Add 4 cloves of minced garlic and sauté for 1-2 minutes until fragrant.
- Add 8 oz of sliced chorizo to the skillet and cook for 5-7 minutes until browned and crispy.
- Pour in 1/2 cup of chicken broth and let it simmer for 2-3 minutes to reduce slightly.
- Add the cooked pasta to the skillet and toss to coat in the chorizo and garlic mixture.
- Stir in 1/4 cup of grated Parmesan cheese and season with salt and pepper to taste.
- Garnish with fresh parsley and serve hot. Enjoy!
