  • 1 pound of large shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1/4 cup of unsalted butter
  • 1 bunch of asparagus, trimmed and cut into 2-inch pieces
  • 4 medium zucchinis, spiralized into noodles
  • Salt and pepper to taste
  • 1/4 cup of grated Parmesan cheese
  • 2 tablespoons of chopped fresh parsley

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Cook for 1 minute until fragrant.
  • Add the butter to the skillet and let it melt. Once melted, add the asparagus and cook for 3-4 minutes until tender-crisp.
  • Add the zucchini noodles to the skillet and toss to combine with the asparagus and garlic butter. Cook for 2-3 minutes until the zucchini noodles are just tender.
  • Return the cooked shrimp to the skillet and toss to combine with the zucchini noodles. Cook for an additional 1-2 minutes to heat through.
  • Remove the skillet from the heat and sprinkle the Parmesan cheese and chopped parsley over the zucchini noodles and shrimp. Toss to combine.
  • Divide the garlic butter shrimp and asparagus zucchini noodles among serving plates. Serve immediately and enjoy!
