  • 4 cups fresh spinach
  • 4-6 large eggs
  • 4 oz feta cheese, crumbled
  • 2 tablespoons chopped fresh parsley

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add 1 chopped onion and cook until softened, about 5 minutes.
  • Stir in 3 cloves of minced garlic and cook for another 1-2 minutes.
  • Add 1 chopped red bell pepper and cook for 5 minutes until softened.
  • Stir in 1 teaspoon of ground cumin, 1 teaspoon of paprika, and 1/2 teaspoon of cayenne pepper, and cook for 1 minute.
  • Pour in 1 can of crushed tomatoes and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Simmer for 10 minutes.
  • Add 4 cups of fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  • Using a spoon, create small wells in the sauce and crack 4-6 large eggs into the wells.
  • Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  • Sprinkle 4 oz of crumbled feta cheese over the shakshuka and let it melt slightly.
  • Garnish with 2 tablespoons of chopped fresh parsley and serve hot with crusty bread or pita.
