Instructions

  • In a large skillet, heat 1/2 tablespoon of olive oil over medium heat.
  • Place one tortilla in the skillet and sprinkle 1/2 cup of shredded cheese evenly over the tortilla.
  • Add 2 tablespoons of diced onions, 2 tablespoons of diced bell peppers, and 1 tablespoon of chopped cilantro on top of the cheese.
  • Place another tortilla on top to cover the filling, press down gently with a spatula.
  • Cook for 2-3 minutes, or until the bottom tortilla is golden brown and crispy.
  • Carefully flip the quesadilla and cook for an additional 2-3 minutes on the other side, until the cheese is melted and the tortilla is crispy.
  • Remove from the skillet and repeat with the remaining tortillas and filling ingredients.
  • Cut each quesadilla into wedges and serve hot with your favorite salsa, guacamole, or sour cream.
