Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the chopped breakfast sausage links to the skillet and cook until browned and cooked through, about 5 minutes.
  • In a separate bowl, beat the 4 large eggs and season with salt and pepper to taste.
  • Push the sausage to one side of the skillet and pour the beaten eggs into the other side of the skillet.
  • Scramble the eggs until cooked through, then mix them with the cooked sausage.
  • Warm the flour tortillas in a separate skillet or in the microwave for 10 seconds.
  • Divide the egg and sausage mixture evenly among the 4 tortillas, placing it in the center of each tortilla.
  • Top each with sliced avocado and shredded cheddar cheese.
  • Fold in the sides of the tortillas and roll them up tightly to form burritos.
