Ingredients
- 4 large eggs
- 4 breakfast sausage links, chopped
- 1 avocado, sliced
- 1/2 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the chopped breakfast sausage links to the skillet and cook until browned and cooked through, about 5 minutes.
- In a separate bowl, beat the 4 large eggs and season with salt and pepper to taste.
- Push the sausage to one side of the skillet and pour the beaten eggs into the other side of the skillet.
- Scramble the eggs until cooked through, then mix them with the cooked sausage.
- Warm the flour tortillas in a separate skillet or in the microwave for 10 seconds.
- Divide the egg and sausage mixture evenly among the 4 tortillas, placing it in the center of each tortilla.
- Top each with sliced avocado and shredded cheddar cheese.
- Fold in the sides of the tortillas and roll them up tightly to form burritos.
- Serve immediately and enjoy!
