Instructions

  • In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves. Remove from heat and let it cool.
  • Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
  • Lay a bamboo sushi mat on a clean surface. Place a nori sheet on the mat, shiny side down. Wet your hands and spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
  • Arrange a layer of crab meat, avocado, and cucumber in the center of the rice. Using the bamboo mat, roll the sushi tightly, sealing the edge with a little water.
  • In a shallow dish, mix the panko breadcrumbs with the beaten egg. Roll the sushi roll in the breadcrumb mixture, ensuring it is evenly coated.
