Instructions

  • In a large pot, combine the cow foot, onion, garlic, scotch bonnet pepper, and thyme.
  • Add 8 cups of water and bring to a boil. Reduce heat and simmer for 2 hours or until the cow foot is tender.
  • Once the cow foot is tender, add the carrots and potatoes to the pot and continue to simmer for an additional 20 minutes.
  • Stir in the coconut milk and season with salt and pepper to taste. Simmer for another 10 minutes.
  • Remove the scotch bonnet pepper and thyme sprigs before serving.
