Spicy Cow Foot Soup

Ingredients
- 2 lbs cow foot, cleaned and chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 scotch bonnet pepper, whole
- 2 tbsp vegetable oil
- 1 tsp thyme
- 1 tsp allspice
- 1 tsp black pepper
- 1 tsp salt
- 8 cups water
- 2 carrots, diced
- 2 potatoes, diced
- 1 cho-cho (chayote), diced
- 1 cup cabbage, chopped
- 2 green onions, chopped
- 1 lime, juiced
Instructions
- In a large pot, heat 2 tbsp of vegetable oil over medium heat.
- Add the chopped onion, minced garlic, thyme, allspice, black pepper, and salt. Sauté for 2-3 minutes until the onions are translucent.
- Add the chopped cow foot to the pot and brown for 5-7 minutes, stirring occasionally.
- Pour in 8 cups of water and add the whole scotch bonnet pepper. Bring to a boil, then reduce heat to low and let it simmer for 2 hours until the cow foot is tender.
- Once the cow foot is tender, add the diced carrots, potatoes, and cho-cho to the pot. Let it simmer for an additional 20 minutes until the vegetables are cooked through.
- Stir in the chopped cabbage, green onions, and lime juice. Let it simmer for another 5 minutes.
- Taste and adjust seasoning if necessary. Remove the scotch bonnet pepper before serving.
