  • 1 tsp black pepper
  • 1 tsp salt
  • 8 cups water
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 cho-cho (chayote), diced
  • 1 cup cabbage, chopped
  • 2 green onions, chopped
  • 1 lime, juiced

  • 1 tsp allspice
  • 1 tsp black pepper
  • 1 tsp salt
  • 8 cups water
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 cho-cho (chayote), diced
  • 1 cup cabbage, chopped
  • 2 green onions, chopped
  • 1 lime, juiced

Instructions

  • In a large pot, heat 2 tbsp of vegetable oil over medium heat.
  • Add the chopped onion, minced garlic, thyme, allspice, black pepper, and salt. Sauté for 2-3 minutes until the onions are translucent.
  • Add the chopped cow foot to the pot and brown for 5-7 minutes, stirring occasionally.
  • Pour in 8 cups of water and add the whole scotch bonnet pepper. Bring to a boil, then reduce heat to low and let it simmer for 2 hours until the cow foot is tender.
  • Once the cow foot is tender, add the diced carrots, potatoes, and cho-cho to the pot. Let it simmer for an additional 20 minutes until the vegetables are cooked through.
  • Stir in the chopped cabbage, green onions, and lime juice. Let it simmer for another 5 minutes.
  • Taste and adjust seasoning if necessary. Remove the scotch bonnet pepper before serving.
  • Serve hot and enjoy the spicy kick of this delicious cow foot soup!
