- 1 tbsp coconut oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 lb sausage, sliced
- 1 cup red lentils
- 4 cups chicken or vegetable broth
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat 1 tbsp of coconut oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the sliced sausage to the pot and cook until browned.
- Stir in the red lentils, chicken or vegetable broth, coconut milk, curry powder, turmeric, cumin, and paprika.
- Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are tender.
