Ingredients
- 6 ripe tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 1 jalapeno pepper, seeded and chopped
- 1/4 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 2 tablespoons hot sauce
- 2 cups tomato juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
Instructions
- In a blender or food processor, combine 6 ripe tomatoes, 1 cucumber, 1 red bell pepper, 1 small red onion, 2 cloves garlic, and 1 jalapeno pepper. Pulse until finely chopped.
- Transfer the chopped vegetables to a large bowl and stir in 1/4 cup extra virgin olive oil, 3 tablespoons red wine vinegar, 2 tablespoons hot sauce, and 2 cups tomato juice.
- Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Stir well to combine.
- Cover and refrigerate for at least 2 hours to chill and allow the flavors to meld.
- Before serving, stir in 1/4 cup fresh cilantro. Taste and adjust seasoning if necessary.
- Serve the spicy classic gazpacho chilled, garnished with additional cilantro if desired.
