Instructions

  • In a blender or food processor, combine 6 ripe tomatoes, 1 cucumber, 1 red bell pepper, 1 small red onion, 2 cloves garlic, and 1 jalapeno pepper. Pulse until finely chopped.
  • Transfer the chopped vegetables to a large bowl and stir in 1/4 cup extra virgin olive oil, 3 tablespoons red wine vinegar, 2 tablespoons hot sauce, and 2 cups tomato juice.
  • Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Stir well to combine.
  • Cover and refrigerate for at least 2 hours to chill and allow the flavors to meld.
