  • 2 cups shredded Mexican cheese blend
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream
  • 1/4 cup salsa

Instructions

  • In a large skillet over medium heat, cook 8 ounces of chorizo sausage, breaking it apart with a spoon, until fully cooked, about 5-7 minutes.
  • Remove the cooked chorizo from the skillet and set aside on a plate lined with paper towels to drain excess grease.
  • Wipe out the skillet with a paper towel and return it to medium heat.
  • Place 1 flour tortilla in the skillet and sprinkle 1/2 cup of shredded Mexican cheese blend evenly over the tortilla.
  • Spread 1/4 of the cooked chorizo over the cheese, then sprinkle 2 tablespoons of diced tomatoes and 1 tablespoon of chopped fresh cilantro on top.
  • Place another flour tortilla on top to cover the filling, press down gently with a spatula, and cook for 2-3 minutes, or until the bottom tortilla is golden brown and crispy.
  • Carefully flip the quesadilla over and cook for an additional 2-3 minutes, or until the second side is golden brown and the cheese is melted.
  • Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and filling ingredients.
  • Cut each quesadilla into wedges and serve with sour cream and salsa for dipping.
