Chinese Beef Noodle Soup with Ginger and Garlic

Ingredients
- 1 lb beef chuck, thinly sliced
- 8 cups beef broth
- 4 oz dried Chinese wheat noodles
- 1 onion, sliced
- 4 cloves garlic, minced
- 2-inch piece ginger, sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1/2 tsp white pepper
- 1/4 cup green onions, chopped
- Salt, to taste
- Black pepper, to taste
Instructions
- In a large pot, heat some oil over medium-high heat. Add the sliced beef and cook until browned. Remove the beef from the pot and set aside.
- In the same pot, add the sliced onion, minced garlic, and sliced ginger. Cook for 2-3 minutes until fragrant.
- Pour in the beef broth and bring to a boil. Reduce the heat to low and let it simmer for 1 hour, skimming off any impurities that rise to the surface.
- Stir in the soy sauce, oyster sauce, sugar, and white pepper. Add the browned beef back into the pot and continue to simmer for another 30 minutes.
- While the soup is simmering, cook the Chinese wheat noodles according to the package instructions. Drain and set aside.
- Season the soup with salt and black pepper to taste. Remove the ginger slices from the soup.
- To serve, divide the cooked noodles into bowls and ladle the beef soup over the noodles. Garnish with chopped green onions.
