  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 large eggs
  • 2 tablespoons crumbled feta cheese
  • Fresh parsley for garnish

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the diced red onion and bell pepper to the skillet and sauté for 3-4 minutes until softened.
  • Stir in the cherry tomatoes and chickpeas, then sprinkle with cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes, stirring occasionally.
  • Create 4 wells in the chickpea and veggie mixture and crack an egg into each well. Cook for 3-4 minutes until the egg whites are set but the yolks are still runny.
  • Sprinkle the feta cheese over the eggs and veggie mixture, then cover the skillet and cook for an additional 1-2 minutes until the feta begins to melt.
  • Garnish with fresh parsley and serve hot.
