Ingredients
- 1 tablespoon olive oil
- 1/2 red onion, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 4 large eggs
- 2 tablespoons crumbled feta cheese
- Fresh parsley for garnish
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced red onion and bell pepper to the skillet and sauté for 3-4 minutes until softened.
- Stir in the cherry tomatoes and chickpeas, then sprinkle with cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes, stirring occasionally.
- Create 4 wells in the chickpea and veggie mixture and crack an egg into each well. Cook for 3-4 minutes until the egg whites are set but the yolks are still runny.
- Sprinkle the feta cheese over the eggs and veggie mixture, then cover the skillet and cook for an additional 1-2 minutes until the feta begins to melt.
- Garnish with fresh parsley and serve hot.
