Instructions

  • In a large bowl, mix 2 cups of cooked and shredded chicken, 1 cup of shredded cheddar cheese, 1/2 cup of diced onion, 1/2 cup of diced bell pepper, 1/4 cup of chopped fresh cilantro, 1 teaspoon of ground cumin, 1 teaspoon of chili powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Lay 4 tortillas on a flat surface and divide the chicken mixture evenly among them. Top with the remaining 4 tortillas to form quesadillas.
  • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Place 1 quesadilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and the cheese is melted. Repeat with the remaining quesadillas, adding more oil as needed.
  • Remove from the skillet and let them cool for a minute before cutting each quesadilla into 4 wedges.
  • Serve hot with your favorite toppings such as sour cream, guacamole, or salsa.
