Ingredients
- 8 oz of spaghetti
- 2 chicken breasts, diced
- 1/2 cup of grated Parmesan cheese
- 4 slices of bacon, chopped
- 2 cups of fresh spinach
- 3 cloves of garlic, minced
- 1 cup of heavy cream
- 2 egg yolks
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Cook the spaghetti according to package instructions. Drain and set aside.
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
- Add the diced chicken to the skillet with the bacon fat and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the olive oil and minced garlic. Cook for 1-2 minutes until fragrant.
- Add the fresh spinach to the skillet and cook until wilted.
- In a small bowl, whisk together the heavy cream and egg yolks. Pour the mixture into the skillet with the spinach and garlic, stirring constantly until the sauce thickens.
- Add the cooked spaghetti, cooked chicken, and grated Parmesan cheese to the skillet. Toss everything together until well combined and heated through.
- Season with salt and pepper to taste.
