  • 1 can water chestnuts, drained and finely chopped
  • 1/4 cup chopped green onions
  • 1 head iceberg lettuce, leaves separated

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the chopped onion and cook until softened, about 3 minutes.
  • Add the minced garlic and cook for an additional 1 minute.
  • Add the ground chicken to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  • Stir in the diced red bell pepper and cook for 2-3 minutes.
  • In a small bowl, mix together the hoisin sauce, soy sauce, rice vinegar, and sesame oil.
  • Pour the sauce mixture into the skillet with the chicken and vegetables, stirring to combine.
  • Add the chopped water chestnuts and cook for an additional 2-3 minutes.
  • Stir in the chopped green onions and remove the skillet from the heat.
  • To serve, spoon the chicken mixture into individual lettuce leaves, creating wraps.
