Instructions

  • In a large pot, combine 1 cup of dried corn kernels and 6 cups of water. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Add 1/2 cup of panela or brown sugar and 1 cinnamon stick to the pot. Stir until the sugar is dissolved.
  • Continue to simmer for an additional 10 minutes, allowing the flavors to meld together.
  • Remove the pot from the heat and strain the liquid to remove the corn kernels and cinnamon stick.
  • Return the strained liquid to the pot and add 1/4 cup of pineapple chunks, 1/4 cup of diced orange peel, and 1/4 cup of raisins. Stir to combine.
