Instructions

  • Add the chicken pieces, chopped onion, minced garlic, and bay leaf to the pot.
  • Reduce heat to low, cover, and simmer for 30 minutes, or until the chicken is cooked through.
  • Remove the chicken pieces from the pot and set aside to cool. Once cool enough to handle, shred the chicken meat and discard the bones and skin.
  • Return the shredded chicken to the pot and bring the broth back to a simmer.
  • Add the white rice, diced carrot, and frozen peas to the pot. Cook for an additional 15 minutes, or until the rice and vegetables are tender.
  • Season the soup with salt and pepper to taste.
