Ingredients
- 5 lbs live crawfish
- 6 quarts water
- 1 cup Cajun seasoning
- 2 lbs small red potatoes
- 6 ears of corn, halved
- 2 lbs smoked sausage, cut into 2-inch pieces
- 2 lemons, halved
- 1 head of garlic, halved
- 1 cup unsalted butter
- 4 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt to taste
Instructions
- In a large stockpot, bring 6 quarts of water to a boil. Add 1/2 cup of Cajun seasoning and the halved lemons and garlic head.
- Add the potatoes and sausage to the pot and cook for 10 minutes.
- Add the corn and continue to cook for an additional 5 minutes.
- Add the live crawfish and the remaining 1/2 cup of Cajun seasoning. Cook for 3-5 minutes or until the crawfish turn bright red and are cooked through.
