Ingredients
- 6 ripe tomatoes, diced
- 2 cloves of garlic, minced
- 1/4 cup fresh basil, chopped
- 2 tablespoons extra virgin olive oil
- 1 teaspoon balsamic vinegar
- Salt and pepper to taste
- 1 baguette, sliced
- 2 tablespoons olive oil for brushing
Instructions
- In a medium bowl, combine 6 ripe tomatoes, 2 cloves of minced garlic, 1/4 cup of chopped fresh basil, 2 tablespoons of extra virgin olive oil, and 1 teaspoon of balsamic vinegar. Season with salt and pepper to taste. Set aside.
- Preheat the grill or a grill pan over medium-high heat.
- Brush the sliced baguette with 2 tablespoons of olive oil on both sides.
- Grill the baguette slices for 1-2 minutes on each side, until lightly toasted and grill marks appear.
- Top the grilled baguette slices with the tomato mixture and serve immediately.
