Ingredients
- 4 slices of turkey bacon
- 4 large eggs
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1/2 cup shredded cheddar cheese
- 4 large flour tortillas
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large skillet, cook 4 slices of turkey bacon over medium heat until crispy. Remove from the skillet and set aside.
- In the same skillet, add 1 tablespoon of olive oil and sauté 1/4 cup diced onion and 1/4 cup diced bell pepper until softened.
- Crack 4 large eggs into the skillet with the sautéed vegetables. Scramble the eggs and cook until just set. Season with salt and pepper to taste.
- Lay out 4 large flour tortillas on a clean surface. Divide the scrambled eggs evenly among the tortillas, then crumble 1 slice of cooked turkey bacon over each portion of eggs.
