  • In a large skillet, cook 4 slices of turkey bacon over medium heat until crispy. Remove from the skillet and set aside.
  • In the same skillet, add 1 tablespoon of olive oil and sauté 1/4 cup diced onion and 1/4 cup diced bell pepper until softened.
  • Crack 4 large eggs into the skillet with the sautéed vegetables. Scramble the eggs and cook until just set. Season with salt and pepper to taste.
