Instructions

  • In a bowl, whisk together 4 large eggs, 1/4 cup of milk, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add 1/2 cup of diced onion and 1/2 cup of diced bell pepper. Cook until softened, about 3-4 minutes.
  • Add the egg mixture to the skillet and cook, stirring occasionally, until the eggs are set, about 3-4 minutes. Remove from heat.
  • Warm the flour tortillas in a separate skillet or in the microwave for 20 seconds.
  • Divide the scrambled eggs among the tortillas. Top each with 1/4 cup of diced tomato, 1/4 of the sliced avocado, and 1/4 cup of shredded cheddar cheese.
  • Fold in the sides of the tortillas and roll them up tightly to form burritos.
