Ingredients
- 4 large eggs
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup diced tomato
- 1 ripe avocado, sliced
- 1/2 cup shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup salsa
- 1/4 cup sour cream
Instructions
- In a bowl, whisk together 4 large eggs, 1/4 cup of milk, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add 1/2 cup of diced onion and 1/2 cup of diced bell pepper. Cook until softened, about 3-4 minutes.
- Add the egg mixture to the skillet and cook, stirring occasionally, until the eggs are set, about 3-4 minutes. Remove from heat.
- Warm the flour tortillas in a separate skillet or in the microwave for 20 seconds.
- Divide the scrambled eggs among the tortillas. Top each with 1/4 cup of diced tomato, 1/4 of the sliced avocado, and 1/4 cup of shredded cheddar cheese.
- Fold in the sides of the tortillas and roll them up tightly to form burritos.
