Instructions

  • Preheat a grill or grill pan over medium-high heat.
  • Season the mahi mahi fillets with 2 tbsp of blackening seasoning, ensuring both sides are coated evenly.
  • Grill the mahi mahi fillets for 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove from heat and set aside.
  • In a large bowl, combine 8 cups of mixed greens, thinly sliced red bell pepper, red onion, cherry tomatoes, sliced almonds, and crumbled feta cheese.
  • In a small bowl, whisk together 1/4 cup of olive oil, 2 tbsp of orange juice, 1 tbsp of lemon juice, 1 tsp of honey, and 1/2 tsp of Dijon mustard to make the citrus vinaigrette. Season with salt and pepper to taste.
  • Divide the mixed greens mixture onto 4 plates. Top each plate with a grilled mahi mahi fillet and drizzle with the citrus vinaigrette.
