Instructions

  • In a large mixing bowl, combine 3 cups of all-purpose flour, 1/4 cup of granulated sugar, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/2 teaspoon of nutmeg.
  • Add 1/2 cup of powdered milk to the dry ingredients and mix well.
  • Cut in 1/2 cup of vegetable shortening until the mixture resembles coarse crumbs.
  • Store the beignet mix in an airtight container until ready to use.
  • When ready to make beignets, heat vegetable oil in a deep fryer or heavy-bottomed pot to 360°F (182°C).
  • To make the beignets, place 2 cups of the beignet mix in a large mixing bowl.
  • Add 2/3 cup of water and stir until a soft dough forms.
  • Turn the dough out onto a floured surface and knead lightly, then roll out to 1/4 inch thickness.
