Ingredients
- 1 pound of beef sirloin, thinly sliced
- 1 tablespoon of vegetable oil
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 teaspoon of chili powder
- 1/2 teaspoon of cumin
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- 4 large flour tortillas
- 2 cups of shredded cheese (such as cheddar or Monterey Jack)
- Sour cream, salsa, and guacamole for serving
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add 1 pound of thinly sliced beef sirloin to the skillet and cook until browned, about 3-4 minutes.
- Add 1 thinly sliced onion and 1 thinly sliced bell pepper to the skillet and cook until softened, about 5 minutes.
- Season the beef and vegetables with 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of garlic powder, and salt and pepper to taste. Stir to combine and remove from heat.
- Place a large flour tortilla on a flat surface and sprinkle 1/2 cup of shredded cheese on one half of the tortilla.
- Top the cheese with a portion of the beef and vegetable mixture, then fold the tortilla in half to cover the filling.
- Repeat with the remaining tortillas and filling.
- Heat a large skillet over medium heat and place the filled tortillas in the skillet, cooking for 2-3 minutes on each side until golden brown and the cheese is melted.
- Remove from the skillet and let cool for a minute before slicing into wedges.
- Serve the beef quesadillas with sour cream, salsa, and guacamole for dipping, and enjoy!
