Instructions

  • In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add 1 pound of thinly sliced beef sirloin to the skillet and cook until browned, about 3-4 minutes.
  • Add 1 thinly sliced onion and 1 thinly sliced bell pepper to the skillet and cook until softened, about 5 minutes.
  • Season the beef and vegetables with 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of garlic powder, and salt and pepper to taste. Stir to combine and remove from heat.
  • Place a large flour tortilla on a flat surface and sprinkle 1/2 cup of shredded cheese on one half of the tortilla.
  • Top the cheese with a portion of the beef and vegetable mixture, then fold the tortilla in half to cover the filling.
  • Repeat with the remaining tortillas and filling.
  • Heat a large skillet over medium heat and place the filled tortillas in the skillet, cooking for 2-3 minutes on each side until golden brown and the cheese is melted.
  • Remove from the skillet and let cool for a minute before slicing into wedges.
  • Serve the beef quesadillas with sour cream, salsa, and guacamole for dipping, and enjoy!
