  • 3 cups beef broth

  • 1 cup liver spread
  • 3 potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup green olives
  • 1 cup grated cheese

Instructions

  • In a bowl, marinate 2 lbs of beef chuck with 1/4 cup of soy sauce and 1/4 cup of vinegar for at least 1 hour.
  • In a large pot, heat 1/4 cup of cooking oil over medium heat. Sauté 1 chopped onion and 4 minced garlic cloves until fragrant.
  • Add the marinated beef and cook until browned on all sides.
  • Pour in 3 cups of beef broth and 1 cup of tomato sauce. Bring to a boil, then reduce heat and simmer for 1 hour or until the beef is tender.
  • Stir in 1 cup of liver spread until well combined.
  • Add 3 peeled and cubed potatoes, 2 sliced carrots, 1 sliced red bell pepper, 1 sliced green bell pepper, and 1 cup of green olives. Simmer for another 10 minutes or until the vegetables are tender.
  • Season with salt and pepper to taste.
  • Transfer the beef caldereta to a serving dish and top with 1 cup of grated cheese.
  • Serve hot with steamed rice and enjoy!
