Beef Caldereta

Ingredients
- 2 lbs beef chuck, cut into cubes
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1/4 cup cooking oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 3 cups beef broth
- 1 cup tomato sauce
- 1 cup liver spread
- 3 potatoes, peeled and cubed
- 2 carrots, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup green olives
- 1 cup grated cheese
- Salt and pepper to taste
Instructions
- In a bowl, marinate 2 lbs of beef chuck with 1/4 cup of soy sauce and 1/4 cup of vinegar for at least 1 hour.
- In a large pot, heat 1/4 cup of cooking oil over medium heat. Sauté 1 chopped onion and 4 minced garlic cloves until fragrant.
- Add the marinated beef and cook until browned on all sides.
- Pour in 3 cups of beef broth and 1 cup of tomato sauce. Bring to a boil, then reduce heat and simmer for 1 hour or until the beef is tender.
- Stir in 1 cup of liver spread until well combined.
- Add 3 peeled and cubed potatoes, 2 sliced carrots, 1 sliced red bell pepper, 1 sliced green bell pepper, and 1 cup of green olives. Simmer for another 10 minutes or until the vegetables are tender.
- Season with salt and pepper to taste.
- Transfer the beef caldereta to a serving dish and top with 1 cup of grated cheese.
- Serve hot with steamed rice and enjoy!
