Ingredients
- 1 pound ground beef
- 1 can (15 ounces) refried beans
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper

- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas
Instructions
- In a large skillet, cook 1 pound of ground beef over medium heat until browned. Drain any excess fat.
- Add 1/2 cup diced onion and 1/2 cup diced bell pepper to the skillet with the ground beef. Cook for 3-4 minutes until the vegetables are softened.
- Stir in 1 can of refried beans, 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for an additional 2-3 minutes until heated through.
- Preheat the oven to 350°F (175°C).
- Divide the beef and bean mixture evenly among the 4 large flour tortillas, placing it in the center of each tortilla. Sprinkle 1/4 cup of shredded cheddar cheese and 1/4 cup of shredded Monterey Jack cheese over the beef and bean mixture on each tortilla.
- Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
- Place the burritos seam-side down on a baking sheet. Sprinkle the remaining 1/2 cup of shredded cheddar cheese and 1/2 cup of shredded Monterey Jack cheese over the tops of the burritos.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
