  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 can of kidney beans, drained and rinsed
  • 1 can of white beans, drained and rinsed
  • 6 cups of chicken broth
  • 1 bay leaf
  • 1 teaspoon of paprika
  • Salt and pepper to taste

  • 1 can of kidney beans, drained and rinsed
  • 1 can of white beans, drained and rinsed
  • 6 cups of chicken broth
  • 1 bay leaf
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the sliced Portuguese sausage and cook until browned, about 5 minutes.
  • Add the chopped onion and minced garlic, and cook until the onion is translucent, about 3 minutes.
  • Stir in the diced carrots and potatoes, and cook for another 5 minutes.
  • Pour in the chicken broth and add the bay leaf and paprika. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the vegetables are tender.
  • Add the drained and rinsed kidney beans and white beans to the pot, and simmer for an additional 10 minutes.
  • Season with salt and pepper to taste.
  • Remove the bay leaf before serving.
  • Serve hot and enjoy!
