Portuguese Bean Soup

Ingredients
- 1 lb of Portuguese sausage, sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 can of kidney beans, drained and rinsed
- 1 can of white beans, drained and rinsed
- 6 cups of chicken broth
- 1 bay leaf
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the sliced Portuguese sausage and cook until browned, about 5 minutes.
- Add the chopped onion and minced garlic, and cook until the onion is translucent, about 3 minutes.
- Stir in the diced carrots and potatoes, and cook for another 5 minutes.
- Pour in the chicken broth and add the bay leaf and paprika. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the vegetables are tender.
- Add the drained and rinsed kidney beans and white beans to the pot, and simmer for an additional 10 minutes.
- Season with salt and pepper to taste.
- Remove the bay leaf before serving.
- Serve hot and enjoy!
