Instructions

  • Preheat the oven to 350 degrees F.
  • In a large bowl, whisk together 8 large eggs, 1/4 cup of milk, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Set aside.
  • In a 10-inch ovenproof skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5 minutes.
  • Add the chopped spinach to the skillet and cook until wilted, about 2 minutes.
  • Pour the egg mixture into the skillet and gently stir to distribute the bacon and spinach evenly.
  • Sprinkle the shredded cheddar cheese over the top of the frittata.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set in the center and the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before slicing and serving.
