Instructions

  • In a large skillet, heat the olive oil over medium heat.

  • Add the black beans to the skillet and cook for an additional 2 minutes, stirring occasionally.
  • In a separate skillet, scramble the eggs over medium heat until they are cooked through.
  • Warm the flour tortillas in a separate skillet or in the microwave for 20 seconds.
  • Divide the scrambled eggs, sautéed vegetables and black beans, sliced avocado, cherry tomatoes, and shredded cheddar cheese evenly among the tortillas.
