Ingredients
- 2 ripe avocados, peeled and pitted
- 2 large tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1/2 red onion, chopped
- 2 cloves of garlic, minced
- 3 cups of vegetable broth
- 1/4 cup of fresh cilantro, chopped
- 1/4 cup of fresh lime juice
- Salt and pepper to taste
- 1/4 cup of olive oil
Instructions
- In a blender, combine 2 ripe avocados, 2 large tomatoes, 1 cucumber, 1/2 red onion, 2 cloves of garlic, and 3 cups of vegetable broth.
- Blend until smooth and creamy.
- Add 1/4 cup of fresh cilantro, 1/4 cup of fresh lime juice, salt, and pepper to taste, and blend again until well combined.
- With the blender running, slowly drizzle in 1/4 cup of olive oil until emulsified.
- Taste and adjust seasoning if needed.
- Transfer the gazpacho to a large bowl or individual serving bowls.
- Cover and refrigerate for at least 1 hour to chill and allow the flavors to meld.
- Serve the avocado gazpacho cold, garnished with a slice of lime and a sprig of cilantro, if desired.
