Instructions

  • In a blender, combine 2 ripe avocados, 2 large tomatoes, 1 cucumber, 1/2 red onion, 2 cloves of garlic, and 3 cups of vegetable broth.
  • Blend until smooth and creamy.
  • Add 1/4 cup of fresh cilantro, 1/4 cup of fresh lime juice, salt, and pepper to taste, and blend again until well combined.
  • With the blender running, slowly drizzle in 1/4 cup of olive oil until emulsified.
  • Taste and adjust seasoning if needed.
  • Transfer the gazpacho to a large bowl or individual serving bowls.
  • Cover and refrigerate for at least 1 hour to chill and allow the flavors to meld.
  • Serve the avocado gazpacho cold, garnished with a slice of lime and a sprig of cilantro, if desired.
