  • 1/2 cup of sugar
  • 1 teaspoon of vanilla extract

Instructions

  • In a medium saucepan, bring 4 cups of water to a boil.
  • Add 1 cup of rice and 2 cinnamon sticks to the boiling water. Reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender.
  • Remove the cinnamon sticks and transfer the rice and water to a blender. Blend until smooth.
  • Pour the blended rice mixture back into the saucepan and add 1 cup of milk, 1/2 cup of sugar, and 1 teaspoon of vanilla extract. Stir well.
  • Cook over medium heat, stirring constantly, until the atole thickens to your desired consistency, about 10 minutes.
  • Remove from heat and discard any remaining cinnamon sticks.
  • Serve hot, garnished with a sprinkle of ground cinnamon. Enjoy!
