Instructions

  • In a small bowl, whisk together 1/4 cup hoisin sauce, 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 teaspoon freshly grated ginger, and 1/4 teaspoon red pepper flakes to make the spicy peanut sauce. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add 1/2 cup diced onion and cook until softened, about 3 minutes.
  • Add 2 cloves of minced garlic and cook for an additional 1 minute.
  • Add 1 pound of ground chicken to the skillet and cook until browned, breaking it apart with a spoon as it cooks, about 5-7 minutes.
  • Pour the spicy peanut sauce over the cooked chicken and stir to combine. Cook for 2-3 minutes until heated through.
  • Stir in 1/4 cup chopped peanuts and remove the skillet from the heat.
  • To serve, spoon the chicken mixture into individual lettuce leaves. Top with chopped green onions, cilantro, and shredded carrots.
